1 ½ cups chopped mixed dried fruits of choice + 1 cup water (or brandy)
1 cup chopped nuts of choice
1 cup of almond flour
½ cup coconut flour, sifted
½ Tbsp baking powder
½ tsp salt
1 tsp cinnamon
¼ tsp mixed spice
¼ tsp ground ginger
½ cup coconut oil, hard from the fridge
Zest of 1 lemon
Zest of 1 orange + 2 Tbsp juice
3 eggs, beaten
½ tsp almond extract
Preheat your oven to 120C
Prepare an 8 inch circle or square cake pan by greasing the sides, then lining the bottom and sides with parchment paper. Wrap the outside of the cake with newspaper and secure.
Simmer the dried fruit with the brandy (or water) until most of the liquid is absorbed and the fruit is plump.
Meanwhile, mix all the dry ingredients together in a large bowl. Then, mix the wet ingredients in a separate bowl. Add the dried fruit mixture to the wet ingredients + 2 Tbsp orange juice.
Combine all the ingredients together and gently mix until combined.
Pour into prepared cake pan and press down for an even surface. Decorate the top with almonds, pecans, dried fruit, etc.
Bake in pre-heated oven for about 1 hour – or until a thin knife inserted into the middle comes out clean.
Cool completely on a baking rack.
